dc.description.abstract | El marañón (Anacardium occidentale L); es un árbol tropical que presenta dualidad en su fruto, consta de un pseudofruto y almendra, la cual es de alta demanda y competitividad en el mercado de nueces. El árbol es cultivado en casi todo el mundo, India, Vietnam, Costa de Marfil, son los países que reportan mayor producción y exportaciones. En el territorio colombiano, los departamentos de Vichada y Córdoba son los cultivadores mayoritarios. El propósito contemplado en este estudio monográfico consistió en documentar la composición bromatológica, fitoquímica y bioactiva del fruto de Anacardium occidentale L. Encontrándose en él un cuantioso valor nutricional, un rico perfil mineral, así como vitamínico y lipídico. Además de diversos fitoquímicos, habiéndose registrado más de 70 metabolitos secundarios que incluyen flavonoides, ácidos fenólicos, carotenoides, terpenos, fitoesteroles y ácidos anacárdicos. Compuestos que están relacionados a su vez con actividad antioxidante, antimicrobiana, antiparasitaria y antidiabética. La validez de estas actividades biológicas resulta como respaldo a los diferentes usos tradicionales que se atribuye al marañón en distintos países, donde es utilizado en pluralidad de tratamientos a saber de antigripal, cicatrizante, presión arterial, colesterol, y enfermedades venéreas. | spa |
