dc.description.abstract | Se estudió el efecto que tienen el tiempo, la potencia y la frecuencia de ultrasonido en el rendimiento por peso de la hidrólisis enzimática de almidón nativo de yuca, con enzima amiloglucosidasa y su efecto en las propiedades tecno funcionales: índice de absorción de agua (IAA), índice de solubilidad (ISA), poder de hinchamiento (PH), capacidad de absorción de agua (CAA) y capacidad de absorción de aceite (CAC); además, se determinó la efecto en las propiedades de pasta: temperatura de gelatinización, viscosidad máxima y viscosidad final obtenidas mediante un viscoamilograma. Finalmente, se realizó un estudio morfológico con espectroscopía infrarroja por transformada de Fourier (FT-IR) y microscopia óptica para relacionar la variación de estas propiedades con las características morfológicas del almidón modificado. Con el objetivo de Desarrollar almidones modificados de yuca (Manhiot sculenta) con tratamientos enzimáticos de amiloglucosidasa combinado con ultrasonido, la tendencia de las variables estudiadas sobre las propiedades del almidón se estudió mediante un análisis por superficie de respuesta. Se logró determinar que el tiempo es el principal factor que afecta a las propiedades estudiadas (p<0.05). Por otro lado, aunque no se observan cambios notables en el tamaño y la estructura del gránulo de almidón durante la hidrólisis enzimática con amiloglucosidasa al variar la potencia y la frecuencia del ultrasonido, sí se evidencia un cambio importante en las propiedades tecno funcionales cuando se utiliza ultrasonido. Esto sugiere que existe una relación compleja entre los factores de proceso y las propiedades del almidón. | spa |
dc.description.abstract | The effect of time, power, and frequency of ultrasound on the weight yield of enzymatic hydrolysis of native cassava starch with amylglucosidase enzyme and its impact on technofunctional properties: water absorption index (WAI), solubility index (SI), swelling power (SP), water absorption capacity (WAC), and oil absorption capacity (OAC) was investigated. Additionally, the impact on paste properties: gelatinization temperature, maximum viscosity, and final viscosity obtained through a viscoamylogram, was determined. Finally, a morphological study was conducted using Fourier-transform infrared spectroscopy (FT-IR) and optical microscopy to correlate the variation of these properties with the morphological characteristics of the modified starch. With the objective of developing modified cassava starches (Manhiot sculenta) through enzymatic treatments with amylglucosidase combined with ultrasound, the impact of the studied variables on the starch properties was analyzed through response surface analysis. It was determined that time is the main factor affecting the studied properties (p<0.05). On the other hand, although no significant changes in the size and structure of starch granules are observed during enzymatic hydrolysis with amylglucosidase when varying the power and frequency of ultrasound, there is a significant change in techno-functional properties when ultrasound is employed.
