This project consists of 4 fundamental elements such as a market study detailing the characteristics of supply and demand around the product to be marketed, as well as its aspects of distribution channels and 4 customer preferences. On the other hand, there is a technical study where the operational characteristics of the project are consigned, accompanied by an administrative study where the elements of employees, functions and conformation of the company in legal matters are explored. Finally, there is a financial study where the investments, costs and expenses associated with the project are detailed, as well as the profitability obtained with it, where its viability could be demonstrated. In addition, it can be concluded that there is a genuine interest on the part of confectionery and bakery companies in the adoption of this type of alternative flours for the production of their food. It is concluded that, although there is a level of interest and demand within the market, strategic actions must be developed to achieve the sales volumes established within the business plan
