Tiene como principios básicos, conservar la calidad e inocuidad de la fruta, reducir las pérdidas y garantizar su comercialización. Esta etapa del cultivo está interrelacionada con el manejo precosecha y la labor de cosecha, de tal manera que el manejo responsable del cultivo de banano en estas tres etapas garantiza la obtención de beneficios a los productores al momento de comercializar la fruta. El objetivo de la práctica fue realizar seguimientos de las labores de postcosecha en los puntos críticos de control del sistema de gestión de calidad Agrícola Sara Palma S.A.S., para maximizar el aprovechamiento de la fruta. Durante la estancia, se realizó seguimiento y control de labores en postcosecha, en gran parte de las fincas de la empresa, desarrollando las actividades programadas en el área de calidad, capacitaciones a operarios y directivos, además se analizó la información obtenida semana a semana, lo cual permitió tomar medidas correctivas para el mejoramiento continuo del proceso de postcosecha, garantizando calidad y mejora de los indicadores de comercialización de la compañía.Post-harvest is an activity that begins from the moment the fruit is harvested until it reaches the final consumer. Its basic principles are to preserve the quality and safety of the fruit, reduce losses and guarantee its commercialization. This stage of the crop is interrelated with pre-harvest management and harvesting work, in such a way that responsible management of banana cultivation in these three stages guarantees the obtaining of benefits to producers when marketing the fruit. The objective of the practice was to monitor post-harvest work at critical control points of the Agricola Sara Palma S.A.S. quality management system, to maximize the use of the fruit.
