There are in their soils countless products of vegetable consumption, exotic fruits, native fruits and daily use, vegetables that are sources of nutrients to all populations, and a variety of tubers that are source of energy to consumers. Among the great tropical diversity of harvested fruits there are mangoes, papayas, soursop, mamoncillos, corozo, guavas, cherries, zapotes, nisperos, caimito, passion fruit, guamas, melons, among many others; as vegetables there are cucumbers, lettuce, aubergines, ahuyamas, pumpkins and tubers, cassava, yams, sweet potato etc. There is a lack of registers of scientific aspects of some species of fruits and vegetables, which are little known or almost unknown often exist only knowledge of the source region; this project seeks to identify the species and varieties of plants that are used fresh for human consumption, a field of investigation accompanied by production control, quality control and analysis of its components in order to give industry outreach was held in possible to transform these plant products to accompany regional development.
